Homemade Honey Tarragon Mustard

I haven't always really liked mustard. Actually, its only been in the past few years that I've really started liking it. Granted I won't eat it out of the bottle or anything, and I really don't like that suspiciously yellow and smooth stuff that you can get at any fast food joint, but I really like grainy and unrefined ones. Going into the super market its actually kind of scary, even the really nice mustards have actual mustard listed as one of the last ingredients on the bottle! Sketchy...





So I can't actually take complete credit for this recipe. Surprisingly enough, we made it in one of my classes called "Herbs, Spices and Medicinal Plants" here at school. I think this mustard turned out really well! Its really strong, but would be delicious on any sandwich. I really like the combination of tarragon and mustard, so I ran up to the greenhouse and dried out some tarragon to throw in as well. It turned out really well, AND the mustard would be -gasp- the first ingredient on the label, if it had one!

So first and foremost, you're either gonna need one of these to crush up your mustard seeds:



Or maybe you could use a plastic bag and a mallet, I haven't tried it that way but if you do give it a shot and let me know how it turns out!

Homemade Honey Tarragon Mustard
4 Tbsp freshly crushed mustard seeds (i used white but it'd probably be fun to experiment!)
2 Tbsp water
1 tsp raw apple cider vinegar
1 Tbsp olive oil
1 Tbsp honey
pinch of salt
1 Tbsp dried tarragon

Directions:
1. Put the crushed mustard seed, and all the wet ingredients in a bowl and mix them into the mustard powder till they form a paste.
2. Add the salt and tarragon, and then you're all set! Easy as...mustard.

Raw Apple Cider Vinegar- helps detox the body, very rich in potassium, helps break down excess fats in the body, rich in acetic acid.
Mustard seed- due to its isothiocyanates, mustard seed is thought to have anti-cancer properties. It is also a great source of selenium, which alleviates asthmatic and rheumatoid arthritic problems. High magnesium quantities also have been shown to help reduce high blood pressure,  to restore normal sleep patterns in women having difficulty with the symptoms of menopause, to reduce the frequency of migraine attacks, and to prevent heart attack in patients suffering from atherosclerosis or diabetic heart disease.
Terragon- known to be a remedy for toothache due to eugenol content, helps improve digestion, can act as an appetite stimulant, and is high in anti-oxidants.
